Soaked Black Beans

We eat a lot of beans at Casa de Baker. They’re inexpensive, delicious and when prepared properly, extremely nourishing.

Beans need to be soaked in an acid and cooked slowly to break down antinutrients that would inhibit proper digestion. In addition to this, I cook them in homemade bone broth, which enhances their nutritional value and makes them more digestible.

Bone broth is one of the most important foods to consume frequently for a healthy gut, and it is even more important for growing children. It gives the beans an amazing flavor too! I have a recipe for a basic bone broth here.

When we have people over I like to just put this dish out in a crock pot on the table. It makes a lot and doesn’t cost much and it’s a real crowd pleaser served alongside some Spanish Rice. You can also make refried black beans if you follow the steps here.

Homemade Frijoles Negros (Black Beans) Recipe

Ingredients
  1. One Pound dry black beans
  2. 4 Cups beef or chicken broth (recipe to make your own here)
  3. 3 Onions, chopped
  4. 3 Anaheim chili peppers, diced
  5. 3 Cloves Garlic, diced
  6. 3 Bay Leaves
  7. 1 Tablespoon Cumin
  8. Salt and Pepper to taste
  9. 2 Tablespoons lemon juice for soaking
  10. Filtered water for soaking
Instructions
  1. Place dry beans in a glass or ceramic bowl. Cover with filtered water and lemon juice. Loosely cover bowl with a towel. Soak overnight.
  2. In the morning, turn the beans into a colander and rinse.
  3. Put all ingredients in a dutch oven, soup pot or crock pot and cook over low heat 8 hours, or until soft.
